Boiled Dinner
Traditional comfort food from the Canadian East Coast. This one pot meal is easy to make and easy to love.
Servings: 8 people
Equipment
- Large stock pot
Ingredients
- 5 pounds salt beef
- 6 carrots
- 1 medium cabbage cut in 8
- 1 medium turnip peeled, halved and sliced
- 10 medium yellow potatoes peeled
- ½ cup butter
Dumplings
- 2 cups unbleached all purpose flour spooned and leveled
- 1 ½ tablespoons baking powder
- ½ teaspoon salt
- 1 tablespoon canola oil
- ¾ cup cold water
Instructions
- Place beef in large stock pot. Cover beef with water, Boil for 30 minutes. Drain water from pot. Cover beef again with cold water, return to heat and bring back to a boil. When it starts to boil, lower the heat and simmer for 2 hours.
- Next add cabbage, turnip and carrots and continue to cook for 1 hour.
- Then add the butter and potatoes and cook for another 25 minutes.
Dumplings
- While the potatoes are boiling, prepare the dumplings. In a medium bowl whisk the flour, salt and baking powder.
- Next add the oil to the dry ingredients and stir together with a fork.
- Add water a little at a time until you get the consistency of a soft dough.
- Using about ¼ cup of dough form dough into balls,
- Lightly roll dough balls in flour.
- Place dumplings immediately into simmering pot and cover. Let boil for 20 minutes. Do not remove cover during this process.
Serving
- Remove meat, vegetables and dumplings and place on serving platter. Discard liquid.
- Serve with molasses, pickled beets and mustard pickles if desired.
