Baked Beans
Real old fashion flavor baked beans. These beans are perfect served up as a side with eggs for breakfast or alone for lunch or supper.

Equipment
- Large saucepan or Dutch oven
- Bean pot
Ingredients
- 2 cups white navy beans
- ½ pound finely diced salt pork
- 1 finely chopped onion
- ½ cup fancy molasses
- ⅓ cup light brown sugar
- ½ teaspoon dry mustard powder
- ⅛ teaspoon freshly ground black pepper
- 2 cups water
- 1 teaspoon salt more or less depending on taste
Instructions
- Add beans to large pot and cover with water. Let beans soak at room temperature overnight.
- Next day drain soaking water from beans and add fresh water to pot. Bring beans to boil and simmer for 45 minutes to a hour or until skin of beans begin to crack. Drain beans and set aside.
- Preheat oven to 250°F
- Place ½ of diced salt pork at bottom of bean pot. Add half of beans on top of pork. Next add the remainder of salt pork, onions and top it with the other half of the beans. Finally add the molasses, brown sugar, mustard powder, pepper and water. Place cover on bean pot and bake in preheated oven for 6 hours. Remove cover and bake 1 more hour. Season with salt to taste.

What brand of beans are you using? Lately I have found beans and peas difficult to cook..
Over the years, we have used many different brands from different grocery stores. Lately we have been buying the large bags available at Costco.
Josie I made the beans and they are lot better than my recipe I fine my recipe thicken up when left and these don’t I will make this recipe because I am really happy with results
We have been making this bean recipe for the last 20 years. Never gets old.
