Lazy Daisy Cake

A moist hot milk cake topped with a broiled coconut brown sugar topping. This tasty cake stays moist for days, so it is an excellent make ahead dessert.

Equipment

  • 9 X13 baking pan broiler safe
  • 1 Medium bowl
  • Stand Mixer
  • Medium saucepan

Ingredients 

Hot Milk Cake

  • 2 cups unbleached all purpose flour spooned and levelled
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 4 eggs
  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk
  • ¼ cup butter

Brown Sugar Coconut Topping

  • ¾ cup butter
  • cups packed light brown sugar
  • ¼ cup whole milk
  • ¼ cup whipping cream
  • 2 cups coconut unsweetened or sweetened

Instructions

  • Preheat oven to 350℉.
    Grease and flour a broiler safe 9×13 baking pan.
  • Add flour, baking powder and salt to a medium bowl. Whisk to combine. Set aside.
  • In bowl of stand mixer, add eggs, granulated sugar and pure vanilla extract.
  • Beat on medium high speed until light and thick (about 5 minutes).
  • While egg mixture is beating, add milk and butter to a small saucepan. Heat until hot but not boiling. Turn of heat.
  • Add dry ingredients to beaten egg mixture in stand mixer and mix on medium speed just to incorporate.
  • With stand mixer in low speed, add hot milk in a slow and steady stream. Be careful of splashes. Scrape down sides and mix again just until well combined.
  • Pour batter into prepared baking pan. Bake in preheated 350℉ oven for 32 to 35 minutes or until toothpick test comes out clean.
  • Let cake rest while you prepare the topping.
  • Add all topping ingredients to medium saucepan. Stir constantly over low medium heat just until butter melts. Bring to a boil then turn off heat.
  • Stir in coconut.
  • Spread topping evenly over warm cake.
  • Don't raise the oven rack and place cake in oven. Turn broiler on. Watch carefully. Bake just until topping is bubbly all over and just begins to turn light brown ( approximately 2 minutes).
  • Let cake cool down before slicing. This cake is even better the next day. A great make ahead dessert, this cake also freezes very well.
