Sour Cream Cookie Bites
Cute tender little cake like cookies rolled in cinnamon sugar.

- 2 baking sheets
- Small cookie scoop 2 teaspoon size
Ingredients
Cinnamon Sugar Coating
- 2 tablespoons granulated sugar
- ½ teaspoon cinnamon
Cookie Dough
- 1⅔ cups unbleached all purpose flour spooned and leveled
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ⅔ cup granulated sugar
- ⅓ cup softened butter
- 1 egg
- 1 teaspoon pure vanilla extract
- ½ cup sour cream
Instructions
- Preheat oven to 375℉.Line baking sheets with silicone liners or parchment paper.
- To prepare coating: In a small bowl mix together the 2 tablespoons of granulated sugar and the ½ teaspoon of cinnamon. Set aside.
- In a medium bowl whisk together flour, baking powder, baking soda and salt. Set aside.
- In a large bowl add ⅖ cup of granulated sugar and butter. Cream together using a hand mixer. Add egg and vanilla and beat until smooth. Add half of the dry ingredients and mix on low speed just until moistened . Next add the sour cream and mix until blended. Switch to wooden spoon and stir in the remaining dry ingredients.
- Use a small cookie scoop to measure out dough (about 2 teaspoons). Then roll dough into balls ( dough will be slightly sticky). Roll balls into the cinnamon sugar coating and place on cookie sheet.
- Bake in preheated 375℉ oven for 10 minutes. When done transfer to baking rack to cool.
