Sour Cream Cookie Bites

Cute tender little cake like cookies rolled in cinnamon sugar.

Ingredients 

Cinnamon Sugar Coating

  • 2 tablespoons granulated sugar
  • ½ teaspoon cinnamon

Cookie Dough

  • 1⅔ cups unbleached all purpose flour spooned and leveled
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • cup granulated sugar
  • cup softened butter
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream

Instructions

  • Preheat oven to 375℉.
    Line baking sheets with silicone liners or parchment paper.
  • To prepare coating: In a small bowl mix together the 2 tablespoons of granulated sugar and the ½ teaspoon of cinnamon. Set aside.
  • In a medium bowl whisk together flour, baking powder, baking soda and salt. Set aside.
  • In a large bowl add ⅖ cup of granulated sugar and butter. Cream together using a hand mixer. Add egg and vanilla and beat until smooth. Add half of the dry ingredients and mix on low speed just until moistened . Next add the sour cream and mix until blended. Switch to wooden spoon and stir in the remaining dry ingredients.
  • Use a small cookie scoop to measure out dough (about 2 teaspoons). Then roll dough into balls ( dough will be slightly sticky). Roll balls into the cinnamon sugar coating and place on cookie sheet.
  • Bake in preheated 375℉ oven for 10 minutes. When done transfer to baking rack to cool.
